Gatz surname origin

The family surname is Gatz. The grandparents came to Canada from Germany probably around 1890 or so. I read the name originated in Prussia, possibly in the province of Pomerania where there was a city named Gatz (now called Gac in Poland). There seem to be both German and Jewish people with the name Gatz. Is it mostly a German name or mostly a Jewish name. Could they even be of Polish background because there would have been Polish people living in that area of Prussia.
